Coconut Goji Berry Smoothie

Ingredients:

  • 2 cups (480 ml) coconut milk
  • 2 small (240 g) bananas, peeled
  • 2 cups (60 g) fresh spinach
  • 6 Tablespoons (40 g) goji berries
  • 2 Tablespoons (20 g) chia seeds
  • 2 teaspoons hemp seeds
  • 1 teaspoon vanilla extract
  • 2 cups (280 g) frozen mixed berries

 

Follow these steps:

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed and quickly increase to its highest speed.
  3. Blend for 1 minute, or until desired consistency is reached, using the tamper to press ingredients toward the blades.

 

Chef's Notes:

Adding seeds to your smoothies is a great way to add fiber, fat, and protein. You can easily switch out coconut milk with a homemade nut milk made in the Vitamix.
