Corn Soup

Ingredients:

  • 1 pound (450 g) frozen corn kernels, thawed
  • 3 cups (720 ml) vegetable stock
  • 2 Tablespoons fresh thyme leaves
  • 1/4 Tablespoon (30 g) small onion, peeled
  • 1 teaspoon salt, optional
  • ½ teaspoon ground black pepper

 

Follow these steps:

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then increase to its highest speed
  3. Blend for 6 minutes, or until heavy steam escapes from the vented lid.

 

Chef's Notes:

For thicker soup, add more corn to the blend. To remove some of the foam at the end of this blend, select Variable 3 and blend for 15 seconds. Add your favorite spice blend to the soup to create a unique flavor. Taco seasoning is a hit, and add tortilla chips, black beans, and more corn to add some texture to the soup at the end of the blend.
