A delicious, gluten-free indulgence for all to enjoy.
Ingredients:
- powdered sugar
- 1 cup (120 g) chopped walnuts, optional
- 1¼ cup (225 g) semi-sweet chocolate chips
- 3 large eggs, or egg substitute
- 1 teaspoon vanilla extract
- ¾ cup (150 g) granulated sugar
- ⅓ cup (75 g) butter, cut into pieces
- 1 teaspoon (3 g) salt, optional
- 1 teaspoon ground cinnamon
- ¼ cup (25 g) unsweetened cocoa powder, or chocolate milk powder
- ⅓ cup (40 g) cornstarch
Follow these steps:
- Preheat oven to 350ºF (180ºC) and grease an 8-inch (20 cm) square glass pan.
- In a medium-sized mixing bowl combine the cornstarch, cocoa powder, cinnamon, and salt. Whisk by hand until well blended.
- Place butter, sugar, vanilla, and eggs into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 35 seconds or until well blended.
- Pour mixture into dry ingredients, add chocolate chips and walnuts and stir together to combine.
- Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted in center comes out clean.
- If desired, dust brownies with powdered sugar prior to serving.
Chef's Notes:
Note: When checking for doneness, because of the melted chocolate chips the toothpick may not come out clean. To tell if brownies are done, top should be firm to the touch and sides should be just beginning to turn crisp.
